When I began looking at the vegan fast and casual foods available to the masses, I noticed that although there has been an increase in people converting to the lifestyle I noticed more have not, so I asked myself why. Why has so many chosen not to go vegan or vegetarian. The answers I found was that people do want to eat healthy, they do want to feel better and they want to live longer but vegan food isn’t tasty. These and many others are assumptions.

These unspoken principles act as blinders that don’t allow one to see new possibilities and ideas. (Mattimore, 2017). For people to see new possibilities or try something new someone has to challenge what they see as normal. One of the toughest challenges I will face as a new vegan restaurant will be to get others to go against to unspoken principles. For me to be successful I would first have to identify a few principles.

To question assumptions in my industry first 1 generate a set of, say, 20 to 30, assumptions, including consumer beliefs, product positioning, materials, manufacturing, distribution, and pricing. (Mattimore, 2017). This technique will help me understand my target market. By using this technique, I was able to see new opportunities and come up with a way to hone in on a few. I was able to identify a need in my target market that has not been addressed yet in a particular location. Healthy Alternatives, in the urban community these options are slim. With a heavy concentration of unhealthy fast food and grocers stores with expensive health food sections. It makes the want to change harder to do, but by providing low cost quick healthy vegan meals I can address this problem.

The second technique Role Playing.

This technique helps address the lingering issue that causes most restaurant to fail, poor customer service. I would put myself in the role of the customer.I began this process by scouring the internet looking for good and bad restaurant reviews from customers. I took a few of the most helpful comments and create scenarios then development solutions to resolve them. This helps customer service, food quality, and production. I put myself in the customer role. I would better understand the way a person need to feel when they are spending their money in an establishment.

With these imaginary situations you could also develop leads and create ideas for your business. For example, one patron commented that if there was more inviting music she and her friends would have stayed a bit longer. This was directly connected to one of the assumptions I had from the previous technique. So, to address this I plan to add live jazz, R&B and other styles of music that allows to customer to enjoy more than just food. As we all know the longer a customer stays in your establishment they are likely to buy more. I was also to create a role play scenario that would be used to train my staff and deal with the staff.

The scenarios would train the staff how to deal with the customer both good and bad. These situations can also help with the hiring process, you can role play with the potential employee and use what you’ve learned to determine if the candidate is a good fit. Another example of role play is for the employees to learn from each other. They would get tips on how to make the customer experience to receive more tips. You may use the role play to correct mistakes. As the role play happens you may have an opportunity to be corrected. Correcting any bad behavior that an employee might not have known he or she was doing.

All techniques are valuable but for a vegan restaurant role playing and questioning assumptions have allowed me to formulate ideas on how to deal with customers and employees.
